Scallions + Turkey Meatballs

ALL YOU NEED

  • Organic, ground white/lean turkey meat (Buy about 3/4 pound at the deli counter for two servings)
  • 3 scallions, chopped
  • Dill (fresh or dry spice)
  • Salt, pepper, and cayenne pepper
  • 1 handful Feta cheese
  • Chicken broth
  • Spinach
  • Avocado
  • Whole Foods TM Greek Salad
  • Cooked white quinoa, optional
  • Kalamatha olives, optional and recommended!

SIMPLE STEPS:

  1. Cook quinoa according to package. * I usually rinse 1 c quinoa in a strainer, bring to a boil with 1 c water and 1 c chicken broth, add salt, and let simmer on low with the lid on for 15 minutes
  2. Mash in salt, pepper, cayenne pepper, feta, and scallions with ground turkey meat. Form meatballs!
  3. Pour 1 tbsp olive oil on medium heat. Add meat balls and turn them with tongs until each side is brown. Add chicken broth around the edges to keep moist inside every 5 mins or so, or until it is soaked up by the meatballs.
  4. Serve over spinach, avocado, quinoa and Whole Foods TM Greek Salad
  5. YUM!
