Hemp protein blueberry pancakes

The perfect, post-workout cheat: PROTEIN PANCAKES. Vegan. Gluten free. No sugar added. Low FODMAP. Flourless. PERFECTLY DELICIOUS. Cook time: 30 mins

Ingredients (makes 8 small pancakes):

  • 1/2-1 c rolled oats, blitzed finely in a blender ( if you use 1/2 c, use 1 banana. If you use 1 c, use two bananas)
  • Healthy handful of pecans or walnuts
  • 1 tsp baking powder
  • Pinch of salt
  • Cinnamon
  • 1-2 ripe bananas
  • 3/4 cup coconut milk
  • 1 tsp vanilla
  • 2-4 tbsp of Hemp Protein Powder

Top with:

  • 1 banana, sliced and caramelized
  • Coconut flakes
  • Blueberries
  • Pecans
  • Maple syrup
  1. Set oven to 250 F. Combine dry ingredients in a large bowl: oats, pecans, baking powder, salt, and cinnamon. Be sure to blitz oats in a food processor until finely ground!
  2. Mix banana, coconut milk, and vanilla by mashing up in a small bowl or blending.
  3. Combine dry and wet ingredients. Mash up (I like to use my hands!). Allow batter to set 5 minutes, so the oats can absorb bananas.
  4. Slice banana to caramelize; place on low-medium heat in a dry pan while cooking pancakes.
  5. Heat ½ tbsp coconut oil on med heat, then 1 tbsp at a time, add pancake mix to the pan. The smaller the batch, the easier to flip the pancake and maintain its shape.

Cook until sides are lightly browned and bubbles rise to the top.

Sprinkle a few blueberries on top before flipping.

Cook through on the other side.

  1. Place in 250 F oven to keep warm while the others cook
  2. SERVE!:) Layer with caramelized banana in between, top with blueberries, coco flakes, and crushed pecans… And MAPLE SYRUP!

Yummmmmm. Watch them disappear in seconds.
