BANANA GRANOLA BARS

Low sugar, gluten free, FODMAP friendly … And ADDICTING 🙂 I made a huge batch of these banana granola bars for my trip to Maui!  Knowing there will not be many low FODMAP options when I am traveling, I know these will last about 7 days at room temperature–the perfect snack! 

Prep time: 10 minutes, Cook time: 17 minutes 
Preheat oven to 400 degrees F

Combine in large mixing bowl: 

3 cups oats (gluten-free, if needed)  

1 c chopped pecans 

1/4 tsp sea salt

Cinnamon 

3 tbsp coconut flakes (sweetened or unsweeted; look out for FODMAP sugar alcohols) 

Combine in another small bowl:
 

2 tsp vanilla extract or ground vanilla

3 tbsp coconut oil, room temperature

3 tbsp maple syrup

2 very ripe bananas
1. Mix/ mash all ingredients together with hands. 
2. Spread on cookie sheet lined with parchment paper or tin foil. 

3. Bake 400 degrees for 10 minutes, turn over the granola, then finish off in the oven for 7 minutes. Voila! 
Let cool before storing at room temperature. 

Delicious on yogurt, oatmeal, ice cream… You name it!
