CHERRY & DATE OAT BARS

Warning: these are not fodmap friendly! Dates often irritate IBS tummies. A great substitution is bananas. See the banana granola bar recipe for another good bar! 
This recipe is so yummy and perfect for preparing snacks for the week. They have no added sugar, the dates have enough sugar to make it taste sweet and wholesome! I made a batch before a trip to Maui and they should last for 8 days perfectly fresh in an air-tight container at room temperature. 
Preheat oven to 400 degrees F 

Ingredients:

2 c rolled oats

3/4 c sliced almonds or sunflower seeds 

10 chopped and pitted dates 

2 tbsp coconut oil

1 c chopped dried cherries 

Handful of coconut flakes

2 tsp cinnamon 

4 tbsp chia seeds with 12 tbsp of water (mix in a mug and let set for 10 minutes until chia seeds have absorbed the water and the mixture becomes thick)

1. Simmer dates with coco oil on medium heat for 5 mins or until dates are soft 

2. Blend date mix with 1 c water until it becomes a smooth paste

3. Mix date blend in with the rest of the ingredients (including the chia gel) in a large mixing bowl 

4. Line a baking tray (6×9) with parchment paper. Pour mixture, sprinkle with coco flakes, and bake for 10-15 minutes!
