Overnight Oats are my FAVORITE.
They are the perfect, filling, most delightful way to start the day. Your tummy will be very happy with you. This recipe is, of course, FODMAP friendly.
INGREDIENTS:
1c Whole Foods Rolled Oats
1c Coconut Milk
1 splash of vanilla extract (1/4 tsp, I am more generous because I LOVE vanilla)
1/2 tsp Cinnamon (I like more–add to taste!)
Pinch nutmeg (adds a homey-winter taste to the oats)
DIRECTIONS:
- Stir and refrigerate overnight
- Top with Trader Joes Ancient Grains Blend for a punch of protein and fiber, fresh berries, coconut flakes, and nuts (pecans!) for a little kick. Sweeten with a drizzle of maple syrup.
- Enjoy with a warm cup o’ joe.
