12 Popped Quinoa Chocolate Bark Bits

These are just divine–three easy steps and ready in under 30 minutes.

Impress guests over the holidays with some classic, winter flavors popped with a punch of quinoa protein.  Believe it or not, these are FODMAP friendly and 100% guilt-free.

 

INGREDIENTS:

1 c chopped or bits of dark chocolate

1/2 c rinsed red quinoa

1 tbsp coconut oil

1/2 c chopped pecans

1/4 c dried cranberries (FODMAPPERS, be aware of how many dried cranberries you can tolerate. I usually get away with 1 tbsp.)

A dash of cinnamon and Bourbon vanilla extract

 

3 SIMPLE STEPS:

  1. On medium heat, toss rinsed quinoa in coconut oil in a pan. Stir often with a wooden spoon and allow half of the quinoa to pop. (Popping occurs when it changes from red to opaque/white.) This will take about 5-6 minutes.
  2. Add dark chocolate, stir and allow to melt. Chocolate burns easily–if it starts to smell burnt, remove from heat.  Fold in cranberries, pecans, vanilla and cinnamon.
  3. Spread on a baking sheet lined with parchment paper. Fold paper over and rub the chocolate until 1/4 inch thick (as pictured). Allow to set in the refrigerator for two hours.

Break into small pieces and enjoy with a hot cup of hot chocolate. These disappear in minutes!
