Citrus-Basil Zoodles

ALL YOU NEED

  • 1 c cooked quinoa
  • 1 package of Whole Foods zucchini spirals (“Zoodles”)
    • Or use a spiral-izer to make 3-4 cups of zucchini noodles
  • 2 tsp olive oil
  • 1 tbsp fresh basil, chopped
  • Salt and pepper to taste
  • 1 lemon (juice and rind)
  • 1 lime (juice and rind)
  • Paprika
  • Sweet dried basil
  • Avocado
  • 1 fried egg
  • Salt and Pepper

SIMPLE STEPS:

  1. Prepare quinoa according to package
    1. Or you can do it my favorite way: bring 1 c chicken broth and 1 c water to a boil, add salt, add 1 c rinsed white quinoa to a boil, let simmer for 15 minutes, covered. Remove from heat, squeeze slice of 1 lemon and let quinoa absorb remaining water for remaining 10-20 mins. YUM!
  2. Heat olive oil in the pan on medium-high heat. Pour in the whole package of zoodles.
  3. Let cook on medium heat, until each side is light brown and/or zoodles become the soft consistency of spaghetti. Toss with tongs for about 10 minutes. Add water if it starts to look dry.
  4. Let cook and toss in 1 c cooked quinoa with tongs. Top with the basil, paprika, lemon and lime juice + rind, salt and pepper. Let flavors absorb while mixing.
  5. Serve with 1/2 avocado, sliced, and 1 fried egg for a little protein kick! Yum!
