Citrus-Basil Zoodles
Incase you couldn’t tell, I have been obsessed with quinoa, lemon and zucchini noodles recently. Enjoy this super healthy twist on a basil pasta! Easy weeknight meals.
ALL YOU NEED
- 1 c cooked quinoa
- 1 package of Whole Foods zucchini spirals (“Zoodles”)
- Or use a spiral-izer to make 3-4 cups of zucchini noodles
- 2 tsp olive oil
- 1 tbsp fresh basil, chopped
- Salt and pepper to taste
- 1 lemon (juice and rind)
- 1 lime (juice and rind)
- Paprika
- Sweet dried basil
- Avocado
- 1 fried egg
- Salt and Pepper

SIMPLE STEPS:
- Prepare quinoa according to package
- Or you can do it my favorite way: bring 1 c chicken broth and 1 c water to a boil, add salt, add 1 c rinsed white quinoa to a boil, let simmer for 15 minutes, covered. Remove from heat, squeeze slice of 1 lemon and let quinoa absorb remaining water for remaining 10-20 mins. YUM!
- Heat olive oil in the pan on medium-high heat. Pour in the whole package of zoodles.
- Let cook on medium heat, until each side is light brown and/or zoodles become the soft consistency of spaghetti. Toss with tongs for about 10 minutes. Add water if it starts to look dry.
- Let cook and toss in 1 c cooked quinoa with tongs. Top with the basil, paprika, lemon and lime juice + rind, salt and pepper. Let flavors absorb while mixing.
- Serve with 1/2 avocado, sliced, and 1 fried egg for a little protein kick! Yum!
