Peanut Butter Seed Porridge
HEALTHY FACTS
Oats have lots of fiber. We. Loveeeee. Fiber. Fiber helps the bacteria in your intestines produce short-chain fatty acids which enter the bloodstream to help improve the immune system, decrease inflammation, and stimulate weight loss. Fiber also promotes bowel regulation, especially for those who struggle with constipation or irregular bowels.
I experienced the most wonderful farmer’s market in London this past weekend: Borough Market. It was so cool. As a foodie, I was thriving. Borough Market is a famous open-air market in London with food, olive oils, wines, cheeses and produce from around the world!
Things I ate/bought there:
- Homemade Granola from Mini-Magoo (used in this recipe)
- Sangria
- Argentinean Beef Empanadas
- Strawberries
- Grapes
- Peach Prosecco Spirits
- Oysters
- Homemade Baklava (amazing)
- Scotch Eggs and Sweet Potato “Chips”
- Maple syrup
ALL YOU NEED
- Raw Homemade Granola from Mini-Magoo
- Their raw version in gluten-free, salt-free, and unsweetened! It has coconut flakes, jumbo oats, sunflower seeds, almonds, linseeds and pumpkin seeds! Yum!
- 1 spoonful of fresh peanut butter
- Maple syrup
SIMPLE STEPS:
- Cook your oats as desired (I just do 1/2 c oats with 1 c water in the microwave for 2 minutes)
- Top with some of the raw granola, 1 tbsp of maple syrup, and a spoonful of peanut butter to melt/mix in.
- Enjoy and have a great day!
