HEALTHY FACTS

Avocado contains more potassium than bananas, lowers cholesterol, and is a great source of fiber. Overall, the perfect fruit.  FODMAPPERS beware: avocado is usually okay in quanities of 1/4-1/2 c, so I just eat 1/2 of the avocado to avoid symptoms.

ALL YOU NEED

  • Avocado (PROTIP: keep out until it becomes perfectly ripe, stick it in the fridge to maintain that freshness for a few days)
  • Egg
  • Salt, pepper, cayenne pepper
  • Tomatoes and basil on the side if you wish

SIMPLE STEPS:

  1. Heat a pot half-full of water until lightly simmering (right when the bubbles appear). You may stir in a small amount of white vinegar to help the egg stick together, but I do not always do this.
  2. Crack an egg or two into the low simmering water. Turn off the heat, cover, and set a timer for 3-4 minutes.
  3. Use a mesh spoon or draining spoon to carefully remove the eggs. Place in a sliced avocado, top, and enjoy!
