Pam’s Little Zucchini Pizzas
I love Italian food. But I do NOT love how bloated I feel after eating a ton of pasta (gluten is not low FODMAP) and marinara sauce (usually has onion and garlic). Instead, try this entirely guilt-free, low FODMAP version of a pizza–the Zucchini Pizza, created by my darling Aunt Pam. She and my mom taught me pretty much everything I know about cooking.
HEALTHY FACTS
Zucchini is a low-calorie and high antioxidant vegetable! At the store, find the 8 Ball Zucchini that is medium-sized, shiny and firm.
PROTIP: Roast zucchini thin slices in the oven with olive oil/salt and pepper to make some yummy zucchini chips.
ALL YOU NEED
- 2 Eight (8) Ball Zucchini Squash
- 4 Roma Tomatoes (vine-ripe)
- 1 package of mozzarella cheese
- 1 pack of basil
SIMPLE STEPS:
- Fire up that grill on medium-high heat to lower depending on your grill (everybody’s grill is different)!
- Slice the zucchini 1/2 in thick, lightly spread olive oil the zucchini before grilling
- Grill for 5-6 minutes on each side, or until you have nice grill marks!
- Finish them off on grill by adding the tomato and sprinkling mozzarella.
- Top with freshly chopped basil and serve! Add salt and pepper as desired.
