Coconut Spread PB Cups
Incase you have not guessed, I am obsessed with peanut butter. So simply delicious, satisfying, and often my perfect post-workout protein boost. These little vegan/paleo/low FODMAP Coconut Spread PB Cups are too good to be true and so darn simple with just three ingredients!
PROTIP: buy the real peanut butter (ingredients are just peanuts and salt), and avoid “low fat” peanut butters that just remove healthy fats for carbs and sugar. My absolute FAVORITE peanut butter brand is SpreadPB. Support local, small businesses (who love and appreciate a good spoonful of PB as much as I do) and charity when you buy from SpreadPB! A portion of proceeds actually goes to the Concern Foundation to promote the fight against cancer. PEANUTS are rich in vitamin E, healthy fats that actually reduce cholesterol, and ONE handful of these babies has about 7g of protein (little more than an egg!). Peanut butter is the healthy /VEGAN alternative in a classic PB&J sandwich to a deli meat-sandwich in a kid’s lunch, for sure!

ALL YOU NEED (for 12 PB cups)
- 1 jar Original Nutty SpreadPB
- 2 1/2 c melted 42% cacao chips or semisweet chocolate chips
- 1/2 c coconut flakes
SIMPLE STEPS:
- Microwave 1 c chocolate chips for 1 minute high power, stir until creamy. (Or follow melting instructions on bag)
- Line a cupcake tin with cupcake liners. Spread 1 tbsp of melted chocolate in the bottom of each, tracing with the back of a spoon up to the sides to create a chocolate cup.
- Freeze for 10 minutes.
- Melt the remainder of the (1 1/2 c) chocolate chips.
- Spread a dollop of peanut butter in each chocolate cup. Sprinkle coconut flakes on the top and mash into the PB.
- Evenly spread the rest of the melted chocolate on top.
- Freeze 10 mins, crack open, and enjoy!
