Vegan Chocolate Protein Pancakes
This recipe has 25 g of protein, chock-full of chocolatey goodness. These pancakes are almost too good to be true. They are vegan, gluten-free, no sugar added, and low FODMAP! Nutritious and DELICIOUS for all my fitness-lovers out there.
These pancakes were actually created for a great cause: The Strong Movement (TM). I am all about inspiring women to maintain strong bodies in order to promote happier minds and a healthier lifestyle.

Cook time: 30 mins
Level: easy
Ingredients (makes 8 small pancakes):
- 1/2 c rolled oats
- 1/2 tsp cinnamon
- 1/2 c pecans
- 1 tsp baking powder
- Pinch of salt
- 1/2 (25g) Vega Sport Plant-Based Protein Powder (Chocolate flavor)
- 1 ripe banana
- 1 c unsweetened coconut milk
- 1 tsp vanilla
Top with:
- 1 banana, sliced and caramelized
- Coconut flakes
- Semisweet chocolate chips
- Pecans
- Maple syrup
SIMPLE STEPS:
1. Combine dry ingredients oats, pecans, baking powder, salt, and cinnamon. Blitz in a blender to combine and chop oats up.
2. Mix bananas, coconut milk, and vanilla by mashing up with a fork or blending in a separate bowl.
3. Combine dry and wet ingredients in the blender, blitz for 30 seconds. Allow batter to set so the oats can absorb bananas, about 5 mins.
4. Heat 1 tsp coconut oil on medium heat in a non-stick pan, then using 1 tbsp at a time, add pancake mix to the pan. 1 pancake is 1 tbsp!
5. Cook on medium/medium-low heat until sides are cooked and bubbles rise to the top. Sprinkle a few chocolate chips on top and flip. Cook through on the other side.
PROTIP: add a small amount of coconut oil, heat 1 tbsp batter, then tip pan so the coconut oil just crisps the sides of the cakes.
6. SERVE!:) Layer with strawberries in between, top with blueberries, coco flakes, chocolate chips, and crushed pecans…All you might need is just 1 tbsp of MAPLE SYRUP!
