Simply PB&J Vegan Cookies

These little healthy cookies were a total hit! Perfectly soft, chewy and sweet. AND VEGAN/Gluten Free!  They are a perfect post-workout protein treat or afternoon boost when you need it most.

HEALTHY FACTS

OATS contain more soluble fiber than any grain known to man, have the second largest amount of protein (behind quinoa), they are loaded with beta-glucans (promote lower cholesterol) , and keeps your appetite satisfied. You would also be happy to know, oats are surprisingly rich in avenanthramides, which are antioxidant / anti-inflammatory.

PEANUTS have vitamin E, healthy fats that actually reduce cholesterol, and ONE handful of these babies has about 7g of protein (little more than an egg!). Peanut butter is the healthy /VEGAN alternative in a classic PB&J sandwich to a deli meat-sandwich in a kid’s lunch, for sure!

PROTIP: buy the real peanut butter (ingredients are just peanuts and salt), and avoid “low fat” peanut butters that just remove healthy fats for carbs and sugar.

ALL YOU NEED (for a dozen cookies)

  • 2/3 c creamy peanut butter (I love to use the freshly ground peanut butter from Whole FoodsTM)
  • 1 c gluten free quick cooking oats
  • 1/2 c + 1 handful of raisins
  • 1/4 c almond milk (or your favorite nut milk or just pure water)
  • 1/4 c maple syrup
  • 1/4 tsp cinnamon
  • 1/2 tsp vanilla
  • 1 flax egg (1 tbsp flax seed + 3 tbsp water–the perfect vegan substitute for an egg)
  • 1/4 c coconut flakes (optional, but recommended)
  • 1/4 c chopped peanuts (optional, but recommended)

SIMPLE STEPS:

  1. Preheat oven to 350 F
  2. Prepare flax egg: combine flax seed and water, let set in the fridge for 15 minutes, until it has the thick consistency of an egg.
  3. Heat peanut butter for 30 seconds in the microwave to soften.
  4. Mix all ingredients with a wooden spoon.
  5. Roll into 1.5 inch balls, place on parchment-paper lined baking sheet
  6. Bake for 7-10 minutes!
  7. Top with more maple syrup if you wish and watch them disappear!

Best if kept in the refrigerator. Good for 7-10 days!
