Lemon Sage Potatoes

 

Amazingly FODMAP lemon sage potatoes that are just too easy. They were a hit!

ALL YOU NEED (makes 5-6 servings)

  • 6 red skin potatoes
  • 12 fresh sage leaves, finely chopped
  • Rind of 1 lemon
  • 1 tbsp fresh lemon juice
  • Sprinkle celery salt
  • Salt and pepper to taste
  • 1/4 c of chicken broth
  • 1 tbsp olive oil
  • Optional: cayenne pepper or red pepper flakes

SIMPLE STEPS:

  1. Preheat oven to 425 F
  2. Wash red skin potatoes and (skin-on) chop into bite-size chunks.
  3. Pour 1 tbsp olive oil, chicken broth, and lemon juice into bottom of a baking dish and toss potatoes in olive oil until covered. Toss in chopped sage and lemon rind.
  4. Sprinkle salt and pepper until each is coated evenly. Sprinkle with celery salt very lightly.  Place sliced lemon in the dish for flavor.
  5. Cover with tinfoil and bake for 45-55 minutes (53 minutes was perfect for me at 1200 feet). Cook until a fork sinks in the potato without resistance.
  6. Serve and enjoy!
