These gluten-free, oat-based, low FODMPAP, crispy cookies will melt in your mouth! This recipe is a perfectly delicious, vegan twist on red velvet, and thanks to Pulp Pantry “Red Velvet” Grain-Free Granola, it is one of my all-time favorite treats! That granola adds an extra crunch and delicious, fresh flavor.

Nutritional BOOSTS:

  1. CACAO: antioxidants, magnesium, healthy fats, protein, calcium
  2. OATS: lowers cholesterol and supplies protein and fiber




ALL YOU NEED (makes 2 dozen)

  • 2 c rolled oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1.5 tablespoon cacao powder
  • 1 pinch sea salt
  • 1 c coconut oil or butter, melted
  • 3/4 c brown sugar
  • 1/2 c sugar
  • 1 flax egg or large egg
  • 1 tsp vanilla extract
  • 1 tbsp buttermilk or almond milk
  • 1 tsp apple cider vinegar
  • 1/2 tsp red food coloring
  • 1/2 c Pulp Pantry Red Velvet Granola

SIMPLE STEPS:

  1. Preheat oven 375 F. Lightly toast oats for 7 minutes.
  2. Let oats cool 2-3 mins. Blend 1 c in a food processor or blender until it looks like flour, about 1-2 mins.
  3. Add baking powder, cacao powder, sea salt, and cinnamon. Blitz until mixed.
  4. Combine melted butter/coconut oil and sugars in a separate bowl. Mix with a whisk. Add egg or flax egg, almond milk, vanilla, and apple cider vinegar. Mix and let flavors absorb one another.
  5. Mix in ground oats. Then add PULP PANTRY granola and remaining 1 c oats.  Stir well.
  6. On a parchment-covered cookie sheet, place batter on using a teaspoon measuring spoon about 2 inches apart. They spread easily. Bake for 7-8 mins on 375.
  7. Let cool and dry like a crisp on the sheet. Drizzle on frosting!

EASY VEGAN FROSTING:

Whisk 9 tbsp powdered sugar and 1 tbsp almond milk. Drizzle over cooled cookies.
