BONAPPETITLIFE’S 12 DAYS OF FODMAP
1 Giant Santa Cookie
The family Christmas tradition is for my dad, brother, sister and me to bake homemade chocolate chip macadamia nut cookies for Santa. With the leftover batter we always make one giant, pie-sized cookie called the Giant Santa Cookie. This recipe is a classic.
This year, after my sister and I both realized our gluten intolerances, we switched to gluten-free flour for baking. The gluten-free cookies are a little bit harder than those made with regular flour, but the taste is not sacrificed.
All You Need:
- 2 1/4 c gluten free flour (1 to 1 baking flour)
- 1 tsp baking soda
- 1 tsp salt
- 1 c coconut oil or 2 sticks of butter
- 3/4 c granulated sugar
- 3/4 c packed brown sugar or coconut sugar
- 1 tsp vanilla extract
- 2 eggs
- 2 c chocolate chips of choice (semi-sweet or milk chocolate)
- 1 c chopped macadamia nuts
Simple Steps:
- Preheat oven to 375 degrees F.
- Whisk flour, baking soda, and salt.
- Whisk or beat melted butter, sugars, and vanilla until creamy. Add eggs and beat again.
- Beat in flour mixture gradually. Stir in chocolate chips and nuts.
- Line a baking sheet with parchment paper and place tbps of batter on cookie sheet. To make the giant cookie, use a handful of batter and spread on the sheet.
- Bake cookies for 9-10 minutes and the giant cookie for 15 to 20 minutes (or until golden brown on the bottom).
