4 Stuffed Breakfast Avocados
This may not seem FODMAP friendly, but for most FODMAPPERS, 1/4 of an avocado will not bother their tummy. Know yourself before you try something like this.
It is a very healthy, perfectly delicious way to start the day.
POACHING EGGS (the right way!)
- Fill a medium pot a couple inches with water and place stove on high. Bring to a simmer (little bubble start to rise).
- As soon as the simmer starts, crack eggs into a bowl and pour into the water (or just crack them into the water).
- Use a spoon to move the whites closer to their yolks. Turn off the stove and cover the pot for 4 minutes.
- If you like the yolk harder, leave there for 5 minutes.
Slice the avocados and remove the seed with a knife (as shown). Place the poached eggs inside. Top with salt, pepper, or crushed red pepper if you like spicy food! I also added cooked prosciutto! Yum! Just heat raw prosciutto, between two paper towels to absorb the grease, in the microwave until crispy (2-3 minutes).
