8 Peppermint Hot Chocolate Mousses
These little mousse cups are too cute to be true. It’s a happy holiday stuffed in a little cup. I love these things! I thought of the idea with my mom when wandering through the store. She is full of playful, festive ideas for fun party decorations.
I have to say, heavy whipping cream is not FODMAP friendly, but this recipe is too good not to post. In order to make this recipe FODMAP friendly, substitute the heavy cream with coconut cream (canned).
DARK CHOCOLATE MOUSSE
ALL YOU NEED:
- 1 c semisweet chocolate chips
- 1/4 c dark rum
- 1/2 c sugar
- a shot of espresso (optional)
- 2-3 tbsp lukewarm water
- 2 egg whites
- 2 c heavy cream (or coconut cream for low FODMAP)
SIMPLE STEPS:
- Melt chocolate in the top part of a double broiler (or melt it in the microwave 60 seconds on half power, then 30-second increments on half power, stirring between).
- On low heat, stir rum and sugar with a wooden spoon until sugar dissolves. This may take 10 minutes. Be careful not to brown the sugar.
- Ensure the sugar and chocolate are the same temperature, then stir together sugar syrup and chocolate. Beat in 2 tbsp of lukewarm water with an electric mixer. Set aside.
- Beat egg whites until frothy. Whip the cream with the egg whites.
- Beat chocolate again. (If it has hardened or thickened, add 1 tbsp of water and beat.) Optional: add espresso shot.
- Fold chocolate with cream. Stir with a wooden spoon.
- Pour mousse into a ziploc plastic bag, cut one tip, and squeeze the mousse into little cups or wine glasses.
Homemade Peppermint Whipped Cream:
- 1/4 c sugar
- 1 c heavy cream
- 1 drop peppermint flavor
- Crushed peppermint candy
- Whip 1 c heavy cream with an electric mixer.
- Add just 1 drop of Peppermint Extract/Flavor (it is STRONG)! Also, add 1/4 c sugar and whip again.
- Pour into a plastic ziploc and cut one tip; squeeze the whipped cream on top of the mousse. Sprinkle with peppermint candy bits.
