BONAPPETITLIFE’S 12 DAYS OF FODMAP
10 Five-Ingredient Peanut Butter Cookies
These are unreal. You probably already have all these simple ingredients in your kitchen, yet didn’t realize how amazing they are combined in the form of COOKIES.
Share with the family at any time of the year and impress your gluten-free and FODMAP-friendly guests.
This is the perfect recipe when the holidays start to make you feel heavy, bloated and unhealthy. One cookie and your sweet-tooth will be satisfied, without the guilt!
ALL YOU NEED:
1 c creamy peanut butter
2/3 c sugar (I use Hawaiian cane sugar)
1 egg
1/2 to 2/3 c dark chocolate chips
(Optional: I add a dash of cinnamon and vanilla for good measure!)
Top with sea salt before baking
3 SIMPLE STEPS:
- Preheat 350 degrees F
- Mix the ingredients by hand in a bowl
- Roll into 1 inch balls, place on parchment-lined baking sheet two inches apart. Press with thumb and top with sea salt.
BAKE for 7-10 minutes. ENJOY!
