11 Coconut Almond Macaroons

These melt in your mouth–so sweet and simple!

As always, these are FODMAP friendly.

Makes a dozen macaroons (if you are having guests, you will want to double this recipe!)

INGREDIENTS:

1 1/2 c coconut flakes, densely packed (I used sweetened Baker’s coconut flakes; feel free to use unsweetened flakes if you are looking to reduce the sugar in the recipe)

1/2 c sugar (I used real Hawaiian cane sugar infused with vanilla)

1/8 c coconut flour (or regular flour)

2 egg whites

1/2 c sliced almonds

1/2 tsp Bourbon vanilla extract

1/2 tsp almond extract

1/4 tsp imitation coconut extract

(optional: dip in melted dark chocolate)

 

3 SIMPLE STEPS:

  1. Preheat oven to 325 degrees.
  2. Stir together coconut flakes, sugar, flour, and almonds in a large mixing bowl. Fold in the rest of the ingredients.
  3. Place rounded tablespoons of mixture 2 inches apart on a baking sheet lined with parchment paper. Bake for 20 minutes, or until golden brown on top.

Allow to cool and enjoy with a decaf coffee by the fire. These are sure to please a crowd. Be careful–they are addicting.
