PEANUT ENERGY BITES

YUM! Perfect on-the-go, LOW FODMAP snack! No dates or honey!

  1. Blend the following in a mixer or food processor:

1 C rolled oats

1 tbsp coconut oil

1 tbsp chia seeds

1/2 c chocolate peanut butter or peanut butter 

2 tbsp maple syrup 

1 tbsp cacao powder

Handful of peanuts (optional)

2. Roll into balls. Freeze for 20-60 minutes, depending how you like it.

These are good for 5-7 days in the fridge!
