Tuna cakes

Ingredients:

2 4oz cans white albacore tuna

1 tsp olive oil

2 slices of gluten free or brown rice bread

2 tsp HOISIN sauce + splash of teriyaki sauce or Dijon mustard

1 tsp lemon zest

1 tbsp lemon juice

1 tbsp tuna can water or water

4 tbsp chopped cilantro or parsley

Salt and pepper

Hot sauce optional

1 egg

1/4 c cooked quinoa (optional)

Olive oil for cooking

1. Mix all ingredients, except egg, in a large bowl.  Taste, adjust seasoning to taste. Mix in egg.

2. Divide mixture into 4 patties and chill for 1 hour (chilling optional, helps them keep shape while cooking)

3. Heat pan with olive oil or butter in a nonstick pan. Cook each patty (or just dollop 1 tbsp at a time for 2 minutes on each side) 3-5 minutes each side or until brown on each side.

4. Serve with lemon, mixed greens, and quinoa.  Make a tuna burger, too!
