Grecian Turkey Meatballs

It’s so simple you won’t believe it! FODMAP friendly as always 🙂

INGREDIENTS:

1 package of ground turkey meat

1/4 c Kalamatha olives (and olive juice in the jar! adds flavor!)

1/4 c chopped bell pepper

Fresh basil leaves

1/2 c chopped spinach

1/4 c chopped cucumber

1/4 c crumbled feta cheese

Dill

1/4 c lemon juice

Salt and pepper

Olive oil for cooking

Serve over Heavenly Greek Quinoa Salad and fresh spinach!  Add pepitas/roasted, salted pumpkin seeds for a little crunch!

1. Chop vegetables and combine in a large bowl with cheese.
2. Rinse and combine 1 package of ground turkey meat in a large bowl with all ingredients. (I like to mix well with my hands!)
3. (Step 3 optional) Roll turkey mixture into balls and place on a lined baking sheet. Cover and chill for about 1 hour. Helps them to set before cooking to maintain shape.
4. Heat 2 tsp olive oil in a non-stick pan on medium-high heat.
5. Spoon out turkey combination 1 tbsp. at a time and cook in pan until all sides are brown.
6. Serve over Heavenly Greek Quinoa Salad and fresh spinach!  Top with pepitas/roasted, salted pumpkin seeds for a little crunch!
