Baked Blueberry Walnut Oats

I LOVE HAVING DESSERT FOR BREAKFAST! Healthy dessert, that is!

Gluten free, low fodmap, and DELICIOUS.

Ingredients:

1 cup rolled oats

1 cup coconut milk

1 tbsp coconut oil

1 tsp baking powder

2 tbsp chia seeds

1 tbsp+ vanilla

1 tbsp almond butter (optional)

Cinnamon

Handful of walnuts

Handful of fresh blueberries

Mix together in a baking dish, blueberries should be the last thing you add in.

Bake at 375 for 25-35 minutes.

Sprinkle with coconut sugar or stevia, and/or drizzle with maple syrup for sweetness! Serve with fresh berries.
