Low sugar, gluten free, FODMAP friendly … And ADDICTING 🙂
Combine in large mixing bowl:
3 cups oats (gluten-free, if needed)
1/2 cup raw almonds, coarsely chopped
1/2 cup raw pumpkin seeds or pecans or walnuts
1/4 tsp sea salt
Cinnamon
3 tbsp coconut flakes
Combine in another bowl:
1 tsp vanilla extract or ground vanilla
3 tbsp coconut oil, room temperature
3 tbsp maple syrup
2 very ripe bananas
Mix/ mash all ingredients together with hands.
Spread on cookie sheet lined with parchment paper or tin foil. Bake 400 degrees for 10 minutes, turn over the granola, then finish off in the oven for 7 minutes. Voila!
Let cool before storing at room temperature.
Delicious on yogurt, oatmeal, ice cream… You name it!
