baked bb OAT APPLE PIES
FODMAP friendly*, gluten free, clean cheats, NO SUGAR ADDED! Prep time: 10 minutes! Cook time: 20 minutes!
*Beware FODMAPPERS: not all those with IBS can tolerate apples. Use banana instead! I can tolerate 1/8 of an apple, but know yourself and what you can tolerate.
Ingredients (makes 6-7 mini-pies in a cupcake tin):
1 c gluten free rolled oats
1 c coconut milk or almond milk
1 tsp vanilla
cinnamon
2 tbsp chia seeds
2 tbsp almond butter
1/2-3/4 diced granny smith apple
1 tsp baking powder
2 tbsp raw nuts (I used almonds and pecans)
honey or maple syrup (optional added sweetness)
Mix together, place in cupcake liners in a cupcake tin, and bake for 20 minutes at 350 degrees!
YUM!
Serve with sliced apple and drizzle with honey or maple syrup (maple for the FODMAPpers!)

I know it’s a bummer! Some FODMAPPERs, however, can tolerate 1/4-1/8 of an apple! I’ve noticed it is fine for me, but not necessarily for everyone ! Xoxxo
