Mediterranean Turkey Burgers

MEDITERRANEAN TURKEY BURGERS

Gluten free, low FODMAP, SOOOO easy, few ingredients, and great to impress company!

Ingredients:

1 package of preservative-free, organic ground turkey

1/4 cup fresh dill, chopped

1/2 cup Kalamata olives, pitted and sliced

1/4 cup lemon juice, fresh

1 cup crumbled Feta cheese

TZATZIKI TOPPING:  Stir 1 cup plain Fage greek yogurt, juice of 1/2 a lemon, 1/4 cup chopped cucumber, and 1 tbsp chopped fresh dill.

1. Combine all ingredients, mix well and form patties (be sure to clean up whatever the raw meat touched, yuck!)

2. Grill OR cook on med-high heat in olive oil in a stove pan, dash with salt and pepper. Brown both sides as pictured.

*Hint: When the turkey burger is fully cooked/ready to flip, it will easily unstick itself from the bottom of the pan!*

3. Top with Tzatziki, serve with gluten free pita bread, hummus, and this heavenly Greek quinoa salad.

HEAVENLY GREEK QUINOA SALAD

Ingredients:

Cooked and cooled red quinoa 

1-2 TBSPs, Fresh dill

1 Red bell pepper, chopped

1/2 English cucumber, chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup crumbled Feta cheese

Dressing: whisk 1/2 cup olive oil with 2-3 tbsp of fresh lemon juice

Salt and pepper
