YAM AND ZUCCHINI FRITTERS
Quick-10 minute prep, gluten-free, vegan, FODMAP friendly 🙂
Great as a dinner side OR save for breakfast and top with a sunny-side up egg!
1-1.5 cups of grated yam and/or zucchini
3 tbsp almond meal, cornmeal or gluten-free flour
1 tbsp chia seeds (optional)
Salt and pepper
1 egg
Olive oil or coconut oil
Serve with balsamic glaze (optional)
- Wash and skin the yam; grate yam and zucchini as pictured
- Combine vegetables with chia seeds (optional) and almond meal, cornmeal or gluten-free flour, combine in a large bowl with salt and pepper
- Whisk one egg, combine well
- On medium heat, heat oil first, then add fitter mix 1-2 tbsp at a time (should be a thin disc, about 5 inches across)
- Allow to cook until browned on one side, flip and repeat
- Melt mozzarella cheese (optional) and serve with balsamic glaze (optional)
- Serve with a protein and a green (chicken and broccoli!)
