Eggplant

EGGPLANT MOZZARELLA BAKED WITH TENDER CHICKEN

1. (See “Eggplant (Mozzarella)” link for how to prepare the eggplant)

2. Shake a plastic bag with organic, free-range, boneless, skinless chicken tenders and olive oil, salt, pepper, with some Italian seasoning; sautee until golden brown on both sides

3. Bake finished eggplant mozzarella dish covered in sauteed chicken (see photo) for and additional 10 minutes at 350.

4. Serve! (Hint: leftovers often taste better!)
